I found a roll of pre-cooked polenta in the fridge the other day. I tried to figure out what to do with it, so I made a kick-ass sandwich with it. If you don't like this sandwich, you should have your head checked. I used (in this incarnation):
To prepare, I started by dousing a small frying pan with olive oil, slicing up some polenta (4 3/4cm slices did well), and frying it for a couple of minutes (or to taste), adding a dash of salt. I then generously sprinkled olive oil on the bread and added a dash of garlic powder, and put the polenta on it. Next, I sprinkled some crumbled feta on the other slice of bread. Then, I put the salami on top of the polenta, and put some bacon on top of that. I also spread some hummus on the beast. I sliced up the mozzerella balls and topped the sandwich with them. Finally, I put it all together and witnessed the most kick-ass sandwich ever.
